Serves: 4 people
1/2 a head of broccoli
1 cup of peas
one small brown onion
2 cloves of garlic
2 cups of brown rice pasta
Extra Virgin Coconut Oil for cooking
Himalayan salt and cracked black pepper for seasoning!
1. In a pot cover the pasta with 5 cups of water. Bring to the boil. Stir and reduce heat. Cook until pasta in tender and not to soft.
2. While the pasta is cooking, heat coconut oil in a fry pan and add chopped onion and garlic. Fry until golden brown and then add the broccoli and peas. Cook until the vegetables are tender, but not to soft.
3. Add the cooked pasta to the pan and fry all together for a few minutes until flavors and oils are combined. Add more coconut oil if you need to.
4. Season with salt and pepper!
