"A lot of my cooking is inspired by the time I spent in Tunisia in 2007. The spices, the foods, and the experiences are imprints in my mind that I preserve through the act of reinvention. While I cannot accurately recreate many of the delicious dishes that I enjoyed there, this tea is a memory that rings true every time I drink it. Although it contains caffeine from the black tea and honey, it is meant to be sipped from very tiny, espresso sized glasses. Remember caffeine comes from nature! With the surprise addition of pinenuts, it is a dessert unto itself, or a small gift to be sipped by your friends when they come over to visit. In Tunisia, there is always a pot of Mint Tea ready." 1 pint water
2 teaspoons black tea
4-5 tablespoons honey
Handful fresh mint
4 teaspoons pine nuts
1. Bring water to a boil.
2. Add black tea and steep for 15 minutes.
3. Strain tea, return to pot. Add honey and bring to a boil over a medium flame for a few minutes.
4. Add mint and put the timer on for 2-3 minutes.
5. Remove leaves immediately. Oversteeping the leaves will cause this to be very bitter.
6. Pour tea into small 2 oz. glasses. Serve with pine nuts.
