2 cups cherry tomatoes, heirloom variety if availale
1 large or 2 small cucumbers, peeled, seeded, and diced
1/2 cup chopped parsley leaves
1/2 cup chopped cilantro leaves
3/4 teaspoon sea salt
2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
1. Combine all ingredients in a large bowl and toss.
2. Allow salad to marinate before serving.
**Serve with cooked, chilled quinoa or brown rice.
