Total time: 20 minutes
1 tablespoon extra virgin coconut oil
1 large yellow onion, diced
1 teaspoon cumin
1/2 teaspoon turmeric
1 avocado, chopped into cubes
1 cucumber, chopped into cubes
1 cup of raw greens, spinach, lettuce, parsley, cilantro, kale etc
Salt and pepper to taste
1. Heat coconut oil on medium heat in a frying pan. Add the onion and stir fry for 2 minutes until tender. Add the cumin and turmeric and stir fry or another 2 minutes.
2. In a bowl, mix the onion fry up, cucumber, avocado and greens! Enjoy! Add salt and pepper to taste, and maybe even a squeeze of a lemon.
