Basil & Cucumber Slices with Olive Oil, Salt and Pepper


This makes a great snack, hors d’oeuvres, appetizer (entree as we would say in Australia!) and is a great entertaining food dish. It is super low in calories, yet extremely nutrient rich and filling. It is light and ideal for the person who is incorporating more raw foods into their diet. You might also like to add these on top of a salad, or cooked dish.Total time: 5 minutes

Serves: 2


1 large cucumber
1 cup of fresh basil leaves
1 tablespoon extra virgin olive oil
Salt and pepper to season


1. Slice the cucumber.
2. Put a basil leaf on each cucumber.
3. Drizzle with olive oil.
4. Sprinkle salt and pepper on top! Enjoy!
