Big Breakfast

Total making time: 30 minutesServes: 4 people


1 pineapple
1 papaya
1 cantaloupe/ rock melon
1 cup of beans soaked in 3-4 cups of water overnight so they are ready for cooking (red or black beans)
1 cup of brown or white rice
1 small yellow onion diced
4 eggs
1 cup of beans
Extra Virgin Coconut Oil for cooking
Himalayan Salt and Cracked black pepper for seasoning

1. RICE & BEANS: Bring the rice to the boil, reduce heat and cook until rice is cooked through. Heat a fry pan with coconut oil, fry the onion until golden brown. Add the rice and beans and fry together for 7 minutes. Add salt and pepper to season. (While the rice is cooking continue with other steps…)
2. FRUIT: Cut the pineapple, papaya and cantaloupe into cubes.
3. EGGS: Heat a fry pan with 1/2 cm of coconut oil. Whisk the eggs in a bowl. Pour the eggs into the hot fry pan. Stir occasionally making them scrambled eggs. Sprinkle salt and pepper on top!
4. Serve the fruit, eggs and rice & beans on the plates and enjoy!

+ Add cayenne pepper to the rice and beans to make it spicy!
+ Add fresh peppers to the rice and beans for more spice!
+ Garnish with cilantro/coriander for a fresh herb addition!
