Chipotle Sweet Potato Wedges
One large sweet potato
1/2 tablespoon extra virgin coconut oil
1 tablespoon crushed chipotle pepper (or powder spice)
1/4 teaspoon dried thyme
1/4 teaspoon dried cumin
1/4 teaspoon garlic powder
1. Chop the sweet potato into wedges.
2. Heat a fry pan with coconut oil and add the sweet potato wedges.
3. Cook for 7 minutes and then add the chipotle spice, thyme, cumin and garlic. Continue to cook for another 7 minutes, flipping when needed. Serve when the sweet potato fries are slightly crispy on the outside and soft inside. Serve with salt and pepper to taste if you like.
