Francesca’s Unleavened Whole Rye Bread
4 oz. whole rye flour
1 cup warm, almost hot, distilled water
1 teaspoon vinegar
1. Put the flour in a bowl and slowly add the water and vinegar. Work the
dough for a few minutes and form it into a ball. Roll out with rolling pin.
2. Heat a cast iron pan and once hot, place the flat bread in it. It
is important for the softness of the bread to cover the pan while it
is cooking. Heat the dough for a few minutes on each side. As soon as
it is ready, remove to a plate and cover to keep the humidity in. That
will make it even softer. Delicious!
