Mashed Potato with Almond Milk


Total time: 20 minutesServes: 2


2 large potatoes
1 tablespoon of extra virgin olive oil or coconut oil
3 tablespoons almond milk
1/2 teaspoon salt (optional)
Ground black pepper to serve


1. Boil the potatoes until they are completely soft.
2. Drain the water from the potatoes, and add the oil, almond milk and salt and mash until smooth. Add more almond milk if you want a creamier mash.
3. Season with pepper to taste.
