Turmeric Shrimp Pasta
1 cup brown rice pasta
3 cups water
3/4 cup peas
1 pound shrimp (500g prawns)
1/2 cup extra virgin coconut oil
2 tablespoons of garlic, minced (or diced)
2 teaspoon of turmeric
1. Add the pasta and water to a pot. Bring to the boil and reduce heat on medium. Cook until pasta is more soft than tender approx 10 minutes. Drain the pasta from the water.
2. Add the coconut oil to a pan and heat on medium. Add the shrimp and fry for a minute. Add the garlic and stir fry the garlic and shrimp for a minute. Add the peas and turmeric and continue to stir fry for a few minutes until the prawns are cooked through. Add the pasta to the pan and stir fry together for 30 seconds! Serve!
