Warm Broccoli Salad

Total time: 20 minutes

Serves: 2-4


1 head of broccoli
1 kilo mixed salad leaves
1 punnet cherry tomatoes
1 cup raw almonds
1 cup hemp seeds
1 red capsicum
2 avocados


1. Wash and drain salad leaves
2. Wash and drain broccoli
3. Slice cherry tomatoes in half
4. Slice red capsicum
5. Cube avocaos
5. Toss salad leaves, cherry tomatoes, capsicum, avocado and almonds in a bowl
6. Chop broccoli into bite size pieces and steam lightly
7. Carefully toss through broccoli while still warm
8. Sprinkle with hemp seeds
9. Serve
