Winter Roots Grounding Bowl


I made this for dinner last night, it was very warming, soothing, calming and grounding… perfect for the snow storm that is happening now in New York! It is made with root vegetables that are grown in the ground and hence have a grounding affect on us too. Love LianaTotal time: 20 minutes

Serves: 2


2 tablespoons extra virgin coconut oil
1 yellow onion, sliced
1 parsnip, sliced into rings
1 yam, sliced into french fries
1 potato, sliced into french fries
1/4 cup fresh cilantro
1 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper

1. Heat a fry pan on medium-high with the coconut oil. Add the onions and stir fry for one minute.
2. Add the parsnip, yam and potato. Allow to cook on one side for 7 minutes or until golden brown. Then flip.
3. Add the cilantro, cumin, salt and pepper and stir fry for another 5 minutes or until the vegetables are cooked to your likeness.
