Winter Roots Grounding Bowl
Total time: 20 minutes
2 tablespoons extra virgin coconut oil
1 yellow onion, sliced
1 parsnip, sliced into rings
1 yam, sliced into french fries
1 potato, sliced into french fries
1/4 cup fresh cilantro
1 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1. Heat a fry pan on medium-high with the coconut oil. Add the onions and stir fry for one minute.
2. Add the parsnip, yam and potato. Allow to cook on one side for 7 minutes or until golden brown. Then flip.
3. Add the cilantro, cumin, salt and pepper and stir fry for another 5 minutes or until the vegetables are cooked to your likeness.
